Avocado Lime Rice!

Ok. People who don’t like avocado are insane – this must be a scientifically proven fact!

I mean, what is it about that creamy, mild and satisfying taste not to like? Let’s not forget that it is the best sidekick (in this case, side dish). Shall I remind you of guacamole, avocado spread, avocado dip…the list is endless.

Basically? It might be mid-month and you happen to have random ingredients in your pantry. Hunger pangs are striking. Avocado is one of the ingredients. Here is a recipe to turn all that into a decent meal.

It’s simple, it’s jam packed with nutrients and flavor, affordable and most importantly, it is yummy…Avocado type of yummy!


4 cups cooked rice (about 500gms of heated frozen rice)

avocado (ripe)

2 tablespoons fresh lime juice

1/2 teaspoon salt (or more to taste)

1/4 teaspoon ground cumin

1/4 cup cilantro leaves (chopped)



  1. In a medium bowl, scoop out flesh of avocado and mash with lime juice, salt, and cumin.
  2. Stir in rice and cilantro until well mixed. Adjust salt and lime to taste. Done!
