INGREDIENTS
- 3 tbsp Rina vegetable oil
- 1 kg goat meat or beef
- Salt
- 1 tbsp ginger and garlic paste*
- Squeezed lemon juice
- Pepper
- 1 cup of water
PREPARATION
- Wash meat, put it in a bowl and set it aside
- In a separate bowl, mix ginger, garlic & lemon juice, then pour the mixture over the meat to marinate it
- Cover the meat, let it marinate for about 2 hours
COOKING
- Pre-heat your grill
- Smear the cooking oil over your meat and place it on the hot grill
- Dissolve the salt in warm water and sprinkle it over the meat while roasting so that it is absorbed
- Grill your meat on red hot charcoal embers so that it roasts without burning
- Keep flipping the meat on both sides so that the outside is soft and cooks evenly
- This should take about 45min – 1 hour depending on how well you want it done
- Once done, remove it from the grill and serve hot with ugali, kachumbari and greens or a dish of dad’s choice
*You can also use rosemary only if you so wish
