Zesty Mandazi

It’s cold outside and everyone needs some comfort food. So we decided to share a Kenyan staple with a twist. How about some mandazi to get you through those long days? Here is a recipe that adds a little zing to this time-honoured Kenyan tradition.

It’s simple so you can try it out even if you are new to this.

  1. 4 cups mandazi flour
  2. 5 tablespoons sugar
  3. 1 tablespoon Chapa Mandashi Baking Powder
  4. 1 lemon zest
  5. 1 teaspoon salt
  6. 3 tablespoons Prestige Margarine
  7. 2 cups warm milk
  8. 1 litre of Rina Oil to fry

Steps

  1. In a bowl… Sieve the flour.
  2.  Add sugar, salt, baking powder and the lemon zest and mix together.
  3. Add margarine to the dough and rub it into the flour until it mixes in….
  4.  Add milk and knead until the dough is soft and isn’t sticky
  5. Cover the dough for about 30 minutes in a cool place.
  6. After 30 minutes divide your dough into the desired shape
  7. Fry in the oil until golden brown.
  8. Remove and allow to sit in absorbent paper to allow drainage of excess oil
  9. Serve with any beverage
