Ingredients:

 

For the crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup Prestige Margarine, chilled and cubed

Pinch of salt

For the filling:

 

4 large eggs

1 1/2 cups granulated sugar

1/2 cup freshly squeezed lemon juice

Zest of 2 lemons

1/4 cup all-purpose flour

1/2 teaspoon baking powder

A few drops of yellow food coloring (optional)

For the glaze (optional):

 

1/2 cup powdered sugar

2 tablespoons freshly squeezed lemon juice

Instructions:

Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

For the crust: In a food processor, combine the all-purpose flour, powdered sugar, and salt.

Pulse a few times to mix. Add the chilled Prestige Margarine cubes and pulse until the mixture resembles coarse crumbs and starts to come together.

Press the crust mixture firmly into the prepared baking pan, creating an even layer. Bake the crust for 15-18 minutes or until lightly golden. Remove from the oven and let it cool slightly.

For the filling: In a medium mixing bowl, whisk together the eggs and granulated sugar until well combined.

Add the freshly squeezed lemon juice, lemon zest, all-purpose flour, and baking powder.

Whisk until the mixture is smooth. Add a few drops of yellow food coloring if you want a more vibrant lemon color.

Pour the lemon filling over the crust, spreading it evenly. Bake for 20-25 minutes or until the filling is set and the edges are lightly golden.

Remove the lemon bars from the oven and allow them to cool completely in the pan on a wire rack. Once cooled, refrigerate them for at least 2 hours before cutting.

For the glaze (optional): In a small bowl, mix the powdered sugar and freshly squeezed lemon juice until you get a smooth glaze. Drizzle the glaze over the cooled lemon bars.
